6-11-12, Day 5 – Internship

So you may be asking, “What’s all that white stuff in that pan”?  It’s marshmallows, and so much fun to make, especially when you’re patting into the sheet pan!  Probably get to cut them tomorrow, then we’ll toss them in some confectioner’s sugar and package up – I’ll take more pics.  Definitely beats the store-bought brand, as once you’ve tried marshmallows made from scratch, you’ll never go back to the store-bought processed ones!  Pretty much every morning it’s prepping product for the bakery-cafe, and I remembered everything this morning, but still need to get down the ovens as to what comes out and what goes in.  Lot of stuff going in and out within a small timeframe.  Everyone says after two weeks, you’ll be doing it in your sleep!

Left work a little early today, as I had my mini orientation with the HR department and got all my paperwork completed.  One of the interns from the Culinary Institute of America (CIA) is going back to school, so we’re all meeting up in Hanover for lunch tomorrow after work.  CIA’s curriculum is different han Madison College.  The students attend school for six months, then complete an 18-week internship, back to school for another six months and another 18-week internship.  I like how we did our curriculum at Madison College, getting all our classes done in advance of our internship, as I feel that gave me a pretty good base to start from, and able to catch on quickly at work.

Not much else exciting today.  Going to make some more notes tonight from work, and hopefully tomorrow I can get the ovens down pat!  Beautiful and sunny today, but supposed to get some rain Wednesday and Thursday.

    Do you have a cutter for the marshmellows or are they cut in squares and rolled in powdered sugar
